Halloumi cheese salad

Serves four
250 g halloumi cheese
cold water
Salad
1 head romaine (cos) lettuce
4 tomatoes
½ cucumber
1-2 red onions
1dl Kalamata olives
flat leaf parsley
oregano
freshly ground black pepper

Dressing
2 tbsp vinegar
4 tbsp Greek virgin olive oil

Place the cheese in cold water for 2 hours to lessen saltiness. Tear the lettuce, cut the tomatoes and cucumber into small cubes. Slice the red onions thinly and place into ice-cold water for a moment. Distribute the lettuce, tomatoes, cucumber, olives, parsley and oregano onto four plates.

Dry the cheese with kitchen paper and cut it into 8 slices. Fry the slices on both sides until golden brown. Place the cheese slices on top the salad. Drain the red onion slices and place them on top the cheese. Season with black pepper from mill and add the dressing. Serve with Greek country bread.
