Colourful bean salad

canned beans, e.g. white cannellini beans, green flageolet beans, red kidney beans, big white lima beans, bright green fava beans
1 tin garlic sprouts
1 red onion
½ red pepper
½ green pepper
1 tbsp fresh red chilli
1 small ripe pineapple
1 bunch spring onions
fresh parsley

Dressing
grated lime rind of 2 well washed limes
0,5 dl lime juice
1 dl virgin olive oil
2 tsp crushed ginger
2 tsp crushed garlic
salt

Drain all canned beans and boil frozen beans. Chop onions, peppers, chilli, parsley and pineapple. Add drained garlic sprouts. Mix all ingredients. Prepare the dressing and mix it into the salad.
Serve with grilled meat or fish. In addition to beans, try also lentils, corn and chickpeas.
