To cook new potatoes

  1. Pick potatoes of equal size and gently wash the potatoes in cold water using a brush.

  2. Bring some water to the boil and season it with 1–2 tspn of salt and a few dill stems. Carefully tip the potatoes into the boiling water. The required amount of water is an amount which barely covers the potatoes.

  3. Cook the potatoes under a cover. The cooking time varies according to the potato size and quantity. Check and see if the potatoes are done by using the butt end of a broken cocktail stick: if the stick slides almost half-way, the potatoes are done.

  4. Immediately pour away the boiling water, and again place the kettle without a cover on the hotplate for a moment to properly remove any remaining water so that the potatoes do not become to watery.

  5. Turn the potatoes into a dish and sprinkle chopped dill on top of them. Cover the potatoes with a clean kitchen towel or kitchen paper and serve.
