Roast garlic

Coarse sea salt and large, fresh garlic bulbs

Spread about 3 cm of sea salt in a shallow enameled or metal oven dish. Put whole garlic bulbs in salt. Place in grill for about 20 minutes.

Roast garlic is a fine side dish to serve with vegetables or roast meat. The cloves detach easily and the taste has mellowed. Spread some good olive oil or butter on the cloves. If you crush the cloves and mix them with olive oil and salt, you get a delicious aioli sauce.
