2 x 650 g duck breast fillets
Salt
5-pepper mix
thyme

2,5 dl Touch of Taste chicken broth
2 tbl sp orange juice
soy sauce
Cut a cross with a sharp knife on the fatty part. Brown on a hot pan first the fatty part and after that the meaty part. Season with salt and pepper and place the meat in a pre-heated oven and bake at 200 °C for 15 minutes, until the inner temperature of the meat has reached 66 °C. Wrap the meat in tin foil and leave it for 15 minutes before serving.
Make the sauce
Pour the chicken broth in the pan and boil until about 1/3 of the
broth has evaporated, add the orange juice and season with soy
sauce.
Before serving, cut 1 cm thick cuts from the fillet and serve with roasted vegetables.
