Stockmann Delicatessen's own brands are Stockmann Gourmet, Stockmann Delicatess and Stockmann Meals. All the products are prepared using Stockmann's own recipes in the company's own kitchens or exclusively by subcontractors.
The Stockmann Delicatess series contains products suitable for everyday enjoyment, while the Stockmann Gourmet series only includes special, select delicacies made from the best ingredients. Stockmann Meals ready meals are generally made in Stockmann's own kitchens and sold from Delicatessen's service counter or in packaged form.
The development of Stockmann's own products starts with an idea that can originate with Stockmann's food purchases, product supplier or customers. Often Stockmann wants to improve an existing product and develop it further to satisfy the needs of customers. Initially, the idea for a new Stockmann product is developed in the product development group of the product area in question, then the idea is passed on to be developed further by Stockmann or several manufacturers. The best proposal is chosen and becomes the basis for work on the new product.
While the product is being developed, Stockmann's food purchasing team – product and production designer, home economics teacher and buyers – work closely together with the manufacturer. The product's recipe is experimented with and developed until it the desired outcome is achieved. Finally, the finished product is evaluated by the company's own taste panel to make sure that the product satisfies Stockmann's strict quality requirements.
When the development of a Stockmann product is in the final stretch, work on designing the package starts. This is the responsibility of Stockmann's own Art Director specialised in the design of food packages. The package markings indicate the amount, ingredients and the country of origin of the product, as well as information essential to the product, such as instructions or an organic food label. Package texts are developed in cooperation between the manufacturer and food purchasing experts. Stockmann's own nutrition expert, for example, is responsible for the package markings related to nutrition.
The quality of the final product must satisfy the strict quality requirements of both the authorities and Stockmann. It is the job of the Stockmann's quality manager to ensure that the customers can always be sure they are buying delicious, high-quality, safe and healthy food. The monitoring of product quality does not end with the finished product as the quality of products on the shelf is monitored through regular spot checks. Furthermore, all of Stockmann's own products come with a quality guarantee.
